Crisp Roasted Asparagus
Ingredients
+ 1 bunch asparagus, trimmed
+ 2 TBS olive oil
+ 1 clove, or 1 TBS minced garlic
+ ½ tsp kosher salt
+ ½ tsp fresh ground pepper
+ 2 TBS grated Parmesan cheese
Directions
- Preheat oven to 400 degrees F.
- Bundle and cut the tough bottom parts of the asparagus stems approximately 2 inches from the bottom.
- Arrange asparagus on a cookie sheet or jelly roll pan.
- Coat the asparagus with olive oil, garlic, kosher salt and pepper and mix to evenly coat the asparagus.
- Spread out the asparagus on a single layer.
- Dust with Parmesan cheese.
- Roast in the oven for 10-12 minutes.
- Add salt to taste.
Chef’s note: Use aluminum foil for easy cleanup. If using a fine salt, decrease the amount used in this recipe. Do not overcook or asparagus will become mushy.
