Crisp Roasted Asparagus

Crisp Roasted Asparagus Recipe


+ 1 bunch asparagus, trimmed
+ 2 TBS olive oil
+ 1 clove, or 1 TBS minced garlic
+ ½ tsp kosher salt
+ ½ tsp fresh ground pepper
+ 2 TBS grated Parmesan cheese



  1.       Preheat oven to 400 degrees F.
  2.       Bundle and cut the tough bottom parts of the asparagus stems approximately 2 inches from the bottom.
  3.       Arrange asparagus on a cookie sheet or jelly roll pan.
  4.       Coat the asparagus with olive oil, garlic, kosher salt and pepper and mix to evenly coat the asparagus.
  5.       Spread out the asparagus on a single layer.
  6.       Dust with Parmesan cheese.
  7.       Roast in the oven for 10-12 minutes.
  8.       Add salt to taste.


Chef’s note: Use aluminum foil for easy cleanup.  If using a fine salt, decrease the amount used in this recipe.  Do not overcook or asparagus will become mushy.
