Weekly Box: November 6th & 7th
I love beets and I did not realize how easy they are to prepare! After I remove the stems, I drizzle them with a little olive oil. I wrap in foil and pop them in the oven at 400 degrees for 45-60 minutes. After they are cooked, I peel and dice them. I keep them in the fridge for the week for my salads. When I don't have time to build a salad, I just eat them with goat cheese, a sweet raspberry vinaigrette in a paper bowl as I'm walking out the door. Swim lessons and preschool drop offs/pick-ups consume my Mondays, Wednesdays, and Fridays. I call them my UBER days. Renn and Dex are on opposite schedules for preschool. An 8am start for one and a 12pm start for the other. Too bad I can't run a meter on all the hours I will spend in a minivan over my lifetime!
I roasted my beets as soon as I got them yesterday, One of my friends gave me the best tip: to use gloves to peel my beets. She uses gloves for everything in her kitchen! From handling meat , to mixing salad, separating egg yolk from the white. She taught me the truck of using them to peel my beets!
